The crowded gym tells me people are making resolutions. I support the resolutions in that who am I to tell folks to not try to be your very best.  It is a new year, yo.  Be all you can be! Reach for the stars! Insert platitude here!

Also, get out of my way! Screw your resolutions!

This is unfair, I know. I kinda sorta have a resolution myself.  It isn’t so much a resolution but more than in about a year I am turning…a big number. In the year leading up to the big number I think it is time I get my shit together in regards to my health. Time to see a dermatologist I like, one who can actually help me and clear up the skin that makes me feel less than pretty at times.  I should work on getting more sleep and take a more moderate approach with my eating; I am all naughty or all nice.  A middle ground would be a decent change of pace.  And my mental health? Yeah, I could be kinder to myself on a whole lot of levels. I should change some things.

So, lets not call it a resolution but an assessment, m’kay?

As we are feeling all resolutiony or changy or whatevery, I thought I’d share what I have been hauling in for lunch all week.  Healthy whole grains, lean meats, and tons of veggies make a perfectly balanced meal…all in one tupperware container.  It is simple, reheats well and doesn’t leave you hungry. This isn’t rocket science or a revolutionary recipe, but it tastes flavorful and you don’t hate yourself afterwards.  No so bad in my book.

New year or not, I can definitely live with this.

Quinoa Bowl

1 1/4 cup water

Pinch salt

1 cup red or regular quinoa

Splash olive oil

1 small onion, diced

2 cloves garlic

1 chicken breast cubed

1 chicken (or turkey) sausage, out of casing

1 tsp dry basil

1 tsp dry oregano

Salt and pepper

1 pepper (I used yellow), diced

1 medium zucchini, cubed

3 cups spinach, torn

Feta cheese (I used reduced fat)

Bring water and pinch salt to boil.  Rinse quinoa several times.  Add quinoa to water, lower heat and cook for 15 minutes.  Turn off heat, let sit for 3 minutes and fluff.

Add quinoa cooks, heat oil in large pan over medium high heat.  Add onion and garlic and cook for three minutes.  Add chicken and sausage and cook for 6 minutes.  Add basil oregano and pepper and cook for three minutes.  Salt and pepper everything. Add zucchini and cook for two minutes.  Add spinach and cook until wilted.

Mix quinoa into the chicken/vegetable mix.  Salt and pepper to taste. Top with feta cheese.

Like Brookem and Jessica, I find the start of the year an annoying time to work out. So for the first 2-3 weeks of January I exercise at home. It works just fine, and there’s no crowd. And the music’s about 600% better.

It occurs to me that I could probably do that all the time and save a bunch of money. Hum.

I think the sinus cold I generally have the first week and a half or so of January means I miss most of the Resolutioners, because when I’m usually at the gym I’m instead lying in bed moaning softly and trying to decide if I can breathe enough to go to work.

Sadly, it also means my taste buds are jacked up, and I’m not much enjoying food, or even pictures thereof.

I’m not a resolution person either. I like to do things as I need to regardless of the month. And the packed gym is sooo annoying. I like quiet gyms. Your lunch sounds good. The hardest part about packing a lunch for me is finding something that reheats well. I’ll try this one.
