Yesterday, twitter told me the fall was here! Oh social media, if you were not jammed with musings on the weather, I have no idea what I would do. If weather happens and there is no one there to tweet about it, have the seasons actually changed? It is one of the greater mysteries in life. Right up there with what happens if two unicorns rub their horns together.
We are all excited about fall, it seems. I sure as hell know I was thrilled to buy a new pair of boots this weekend and I rejoiced as I slipped my jean jacket on this morning. But you know what is giong to happen. Soon, the whining will begin…about the cold, about the snow, about the unending days we spend draped in sweaters and sensible shoes. It is a fairly predictable pattern, but hey…it is comforting, no?
I, for one, am ready to welcome stews and soups, roasts and chilis. I will be sad to see the summer produce go, though. I have been trying to pack of much as possible in.
Well, lookey here! Food. A recipe. Yes, I am still cooking. It has been nice not posting recipes all the time, freeing myself of meals accompanied by cameras, but this had to be shared.
It is a super simple, healthy meal that has just as much veggies as pasta. The nuttiness of the shells was really nice and I loved the melty goat cheese sauce. This isn’t too specific a recipe–use as much squash and tomatoes as you want. I was thinking a bit of orange bell pepper would be great in here as well. I like the veggies roughly the same size as the pasta so I can eat it with a spoon, but that is just a personal preference/oddity. Also, make sure to use water from the pot you boiled the pasta in; the starch helps bind the sauce.
Summer, I think we are all going to miss you…but at least we can still eat you for a few days.
Summer Pasta
2 TBSP olive oil
1 large clove garlic, minced
1 large shallot, minced
2 smallish zucchinis, sliced (made mine half moon shape)
1 smallish yellow squash, sliced and diced (half moon shaped)
Salt and pepper
1 tsp dried basil
1 large tomato, seeded and diced, OR 1 cup grape tomatoes, quartered
1/2 box cooked whole wheat pasta (1/4 cup pasta water reserved)
1/3 cup crumbled goat cheese
While pasta cooks, being preparing vegetables. Heat oil over medium heat and add shallots and garlic. Cook for about one minute. Add zucchini and squash. Season with salt, pepper and basil. Cook for about 5 minutes. Ad tomatoes and cook for an additional three minutes. Stir in pasta and water. (I didnt measure the water, just added a generous splash.) Add goat cheese and stir. Salt and pepper to taste.

I absolutely LOVE autumn, so, admittedly, I’ve been one of “Those People” who can’t shut up about the wonderful weather these past few days.
Thing is, you know in a week the temperature is probably going to climb back up into the high 80s, and we’ll all be bitching and sweating on our walk to work again.
Seriously, WHAT would people talk about if weather didn’t exist?

I am SO going to make this! I have a zucchini, squash and tomatoes in my refrigerator right now! I was going to make zucchini fries, and I might still – it’s a huge one, but this looks divine. Thank you.
And I too, have been dreaming about soups and stews, jeans and boots. If only because it means I get to start wearing the Awesome Socks My Mom Makes. Happy Feet Friday – here we come!

I, um…live in Texas. It’s still 90 degrees. We don’t have fall so much as “less summer.” And winter is this brief five day period with ice that reminds everyone what idiots they are on the road.

This looks really good – I’m going to have to sub those peppers for the tomatos since Little Man is allergic but I bet it will still be great. (I think I have the only toddler on the planet that loves peppers, onions, and squash – raw or cooked- more than candy or cookies)

Yay Fall!! I am a winter baby so you will never hear me whining about the cold. The summer humidity and heat I whine about.
I will whine about public transportation in the cold, though. Because it seems DC is still confused about the fact that buses are supposed to arrive…you know…EVER.
The fall and winter have the best fashion and the best food–SOUP!!
And while Spring is my favorite season–we haven’t had one since 1999 so I almost forgot what its like.
High boots over skinny jeans and turtlenecks. I heart Fall.

Goat cheese is my new obsession–I’ve recently discovered a recipe for a fantastic salad (goat cheese, basil, tomatoes, cannelini, and greens) that has me screaming “where were you 10 degrees ago???”
And you do know that in another week, the weather’s going to shoot right back up for the rest of September, right?

Oh and is this weird–I love Fall but I hate squash and all those weird Fall veggies. The soft, fleshy texture of them just icks me out to no end. My veggies need crunch or to be naturally crunchy, softened, and in a soup.
But I love me some goat cheese. Mmmmm mmmm.

I’m so not ready for summer to be over but I do enjoy the weather sometimes. I don’t LIKE the cold but it does make for a good excuse to eat chili and soups and other hot stuff like that.

Thanks for the yummy recipe! I’m surprised it only has 1/3 cup of cheese–I thought it would be more from the pic. I constantly oscillate between to pasta or not-to-pasta (carbs and all that), but this looks so healthy that I’ll have to try it!
