Last Friday night I lost count at 5 shots of tequila.  I am pretty sure that was all I had of Jose, but I know I had some kind of coffee shot, a few beers, and a martini.

We eventually left the bar, ended up somewhere else (why?), and made friends with a  deaf fellow.  Did you know Maxie knows sing language?  And I write pretty awesome notes when I am shattered?  I think even my handwriting was slurry.

Maxie was spending the night and thanks to the kindness of (a sober) Deutlich, we were dropped off safely.  When we rolled into the apartment, Maxie promptly laid on the floor, about two feet from my bed.  Apparently, her legs could just not carry her a step further.  It took me a good three minutes to get her on the bed, where we immediately passed the hell out.

The next morning I had forgotten all of this.

So when I woke up, just wearing a black sequin bra and underwear with my back turned to someone snoring, I freaked the fuck out.  I was terrified to turn over.  It has been a long time since I have done something so stupid.

You will never understand the relief I felt when I rolled over to see Maxie passed out beside me.

I happily rolled back over, a smile on my face.  A few hours later, we were up and I was greeted first thing by a very valid question from my friend: “Are you hugging a teddy bear in your underwear?”

Why, yes, yes I was.  I was a mess.

We eventually dragged our asses out of bed, I ran out to get us muffins, and the day began.  I was throwing a small dinner party that night and needed to get supplies.  I ended up making a mac and cheese with shrimp and bacon, because…well, I am lazy and bacon makes people happy. Plus stuff like mac and cheese is affordable and doesn’t keep you chained to the kitchen all night as your guests enjoy themselves and you sweat.

Everyone really liked this, but it is one of those cases where I wonder if they were humoring me.  This was good, no doubt, but I let it sit on the counter for about an hour before popping it in the oven and I think it was a bit dry.  Also, the cheese was too mild.  Next time I think I would add something really pungent in there to bring it up a level.  lastly, I used super tiny baby shrimp.  bade move.  You could taste it, but not really see it.  Still, it was pasta with loads of cheese and bacon; you cannot really go too horribly astray.  Next time I think I will just get it in the oven stat and make a few tweaks.

Even though the weekend was a bit messy, a touch sloppy, I think it was an overall success.  I mean, I sure did spend a lot of time in my underwear in bed.  That is always a win.

Mac and 6 Cheeses with Bacon and Shrimp

8 oz extra sharp cheddar cheese, shredded

8 oz sharp cheddar cheese, shredded

8 oz monterrey jack cheese, shredded

5 oz fontina cheese, shredded

1 brick light cream cheese

1/2 cup shredded parmesan cheese, plus 3 TBSP

1 1/2 cups low fat milk

2 TBSP flour

Tabasco (as much as you like)

2 TBSP dijon mustard

Salt and pepper

1 package thick cut bacon (10 slices), diced and cooked until crispy

1 lb shrimp, peeled, deveined and chopped (cook it if raw in salted boiling water or buy precooked)

1 cup panko bread crumbs

2 boxes pasta (I prefer rotini or penne with lines)

Preheat oven to 375. Cook pasta in salted boiling water until al dente, about 8 minutes. While pasta cooks, add all the cheese, milk, flour, salt, pepper, tabsaco and mustard to a large pot over medium heat. Whisk continually until melted and smooth. Drain pasta and mix pasta and cheese mixture together. Add shrimp and bacon and stir. Mix together panko and remaining 3 TBSP parmesan cheese with some pepper. Dump pasta in a large casserole dish (I needed two) and them top with panko mixture. Bake for about 35 minutes (until bubbling).

You’re a braver person than me, I’ll give you that! My limit for Tequila is two shots (three if I’m not driving that particular evening), and it sure as hell ain’t Jose (July 4th six years ago – THAT was messy).

Tequila. UGH. Actually, that’s how I knew my hubby was a keeper (before we were married). I threw up in his car (Damn Jose) and he didn’t drop me like a hot potato!

And, what other cheese would you add to really bump up the mac and cheese? It looks FAB but I want to know what other cheese to put in it! Thanks!
