So that works, with the flour-and-oil roux, and the skim milk? Does it get creamy / somewhat emulsified? In any case, this is one I mean it about when I say, "I may have to try this." Also, re: fungi, my friend Danes (about whom I speak fairly frequently, and who got a job at an apparently great DC restaurant that I'll name offline to protect her and their staff) said this weekend that a cook there let her lick the pot that had contained white-truffle mashed potatoes. "Ruh-diculous," was her pronouncement. Yumm.
